Amy's Kitchen- Organic Convenience Foods

Now that I have a family to feed we rarely eat out and it and we very rarely eat convenience foods. Before I was married though, I enjoyed many Amy's meals because I hated to do all that cooking for just me. Amy's let me have a healthy, yummy meal with out all the hassle.
I recently got some coupons for Amy's so I decided to give them a try on a night when my husband would not be home for dinner. I selected two dishes that sounded great but that I never make myself- Tamale Pie for me and Shepard's Pie for my little ones to split.
They were both yummy! The Tamale Pie was too spicy for my kids but not at all too spicy for me. The portion was just right for me, though I know it would not have been enough for my husband! The kids liked the Shepard's Pie. I had a bite and I could taste all the yummy flavors of spices and veggies coming together. It was a nice treat not to have to plan a meal. We won't do this everyday but it is great as a back up option!
I have to share with you some cool facts I learned about Amy's too! Amy's Kitchen was started in 1987 by a couple using their own house and barn as headquarters. The founding meetings were held in the same room where they married in and where their daughter Amy was born. I thought that was awesome that they were organic before that was a buzz word and that they had a homebirth just like I did with my kids.

I love Amy's. I especially like the mac and cheese. Even the gluten-free mac and cheese is yummy!!
